I have always been a little afraid to use whole anchovies in my cooking. It was just so convenient to use anchovy paste that I never really had a reason to change. Until that day… when a client asked that we carry the Recca Salt Packed Anchovies in the 1000g tin. So I said “Sure, if you really think they are that good.“
A few weeks later when our order arrived I figured I better give them a try. So I opened up the tin and looked at all the little fish inside. They are whole anchovies – backbone and fins included! I took a few and filleted them out, and rinsed off the salt for a few minutes under water.
WOW. They are so delicate, and impart a wonderful layer of flavor! Nothing like the salty, fishy anchovy paste that I had been using in the past.
So now I’m a convert, if you want to cook with anchovies use only the best – Recca Salt Packed Anchovies! To store just keep them in your fridge in an air tight container with all of the original salt.
