4 mild, grilled chili peppers (you can use red bell peppers if you can’t find a good chili pepper)
5 T good EVOO*
1/2 c mayonnaise
2-5.5 oz cans oil-packed tuna, drained*
2 T lemon juice
4 tsp salt-packed capers, rinsed*
2 salt-packed anchovy fillets, rinsed*
2 T flat leaf parsley, chopped
Rustic bread like ciabatta*

Combine 2 T good EVOO, mayonnaise, tuna, lemon juice, 2 tsp capers, anchovy fillets in a food processor, pulse until smooth. Spread tuna mixture on a large platter and arrange grilled peppers on top. Garnish with the remaining capers, sea salt, pepper, remaining good EVOO, and parsley. Serve with toasted rustic bread.
