1 c lentils*
1/3 c good EVOO*
Sea salt and fresh ground pepper*
2 bell peppers (one red and one yellow), cut into a small dice
1 small red onion, sliced thin
1 T Chianti wine vinegar*

Put the lentils in a pot with 3 cups water. Bring the pot to a boil and then cover and simmer for 15 minutes or until the lentils are tender.
Drain the lentils well and put in a bowl. Mix in the olive oil and season with sea salt and pepper. After the lentils are almost cool, stir in the bell peppers, onion, and vinegar and toss well. Serve at room temperature or cold.
This is a great side dish and is easily adapted with any mix of vegetables you like!
