Make your own savoiardi for Tiramisu or your favorite Charlotte Recipe.
2 c sifted flour
1 c sugar
4 eggs
2 tsp baking powder
1 T almond extract
Pinch of salt
Beat the sugar and eggs until blended and a light cream color. Mix the flour, salt and baking powder together and slowly sift info the egg mixture. Keep beating until smooth and creamy. Butter a pan and lightly flour. Drop or pipe the mixture in logs that are 3″ long and 1 ” wide. Place about 1.5″ apart. Bake at 350* for about 10 minutes or until light brown.
Makes about 3 dozen lady fingers. If using for Tiramisu make sure they are very cool and let them dry out over night on your counter. Then brush or dip very briefly into the espresso so they don’t dissolve.
