1 c arborio rice*
1 can coconut milk
1 to 2 c milk
1/2 to 3/4 c sugar
1 tsp vanilla extract
1/2 tsp sea salt*
1 c shredded coconut

Place the coconut milk, milk, arborio rice, and sea salt in a heavy bottomed pan. Bring to a simmer, cover, and cook until rice is soft, about 20 minutes. Remove lid and stir. You can add more milk to thin out. Stir in sugar, vanilla, and coconut. Taste and add more sugar if needed When it is at the desired consistency pour into dishes, let cool, and enjoy.
This is a great filling for individual tarts with fresh fruit!
