1 chicken, about 4 lbs
4 oz butter
1 onion, sliced
1/4 c water
1/2 c marsala
Sea salt & fresh ground pepper*

Clean chicken and cut into serving pieces. Season with sea salt and fresh ground pepper. Melt the butter in a skillet. When the skillet is very hot add the chicken and brown on both sides for about 5 minutes. Add the onion and cook another 2 minutes. Lower the heat and add water. Cover the skillet and simmer about 20 minutes or until the chicken is tender. Add the marsala and simmer another 10 minutes. If the liquid gets too low you can add a little water.
Serve chicken very hot. This is great to make and serve over creamy polenta.
