This is a simple recipe that can be used in a number of tasty ways! Make these peppers as a simple appetizer on bread, use in a hot sandwich/panino, or to top your favorite pizza.
8 large bell peppers, any color
6 T good EVOO*
1 garlic clove, halved
Sea salt & fresh ground pepper*

Wash and dry the peppers. Remove the stems and seeds. Cut into 1″ strips. In a large pan heat the olive oil and garlic until the garlic starts to perfume (give off scent). Add the peppers and season with sea salt and pepper. Cook over high heat for 5 minutes, stirring often to prevent burning. When slightly brown turn down the heat and cook for another 15 minutes or until soft. Use in your favorite recipe!
