1/2 c good EVOO*
4 T Acetorium Cherry Wine Vinegar*
1 garlic clove, minced
1/2 tsp dry mustard
1/4 tsp sea salt*
2 oz Mountain Gorgonzola*

Mix mustard, sea salt, and garlic thoroughly. Stir in the vinegar. Slowly whisk in the olive oil until well blended. Stir in crumbled Gorgonzola and use to dress any green salad.
