1.5 lbs mushrooms, I like cremini
2 T parsley, chopped
2 garlic cloves, minced
4 T Parmigiano Reggiano, grated*
1/4 c good EVOO*
1/2 tsp oregano*
3/4 c bread crumbs*
Sea salt & fresh ground pepper*

Clean the mushrooms and place in a baking dish with 1 T of the olive oil. Coat the mushrooms evenly and sprinkle with parsley, garlic, oregano, cheese and half of the bread crumbs. Season with sea salt and fresh ground pepper. Pour the remaining olive oil over the top and the remaining bread crumbs.
Bake at 350* for 25 minutes or until the mushrooms are tender. If the baking dish becomes too dry add 1/4 c water and bake another 5 minutes. Serve very hot with some crusty bread.
