1 cup dried cherries
1 cup water
1/2 cup sugar
1/4 tsp sea salt*
8.8 oz mascarpone cheese*
1/2 cup whole milk ricotta*
1/2 tsp almond extract
1/4 cup powdered sugar
30 amaretti cookies, crumbled*

Combine cherries, water, sugar and 1/8 tsp sea salt in a small sauce pan. Simmer for 20 minutes, stirring often. Let cool.
Blend mascarpone, ricotta, extract, powdered sugar, and 1/8 tsp sea salt in a food processor until smooth. Divide the cherries among 4 stemmed glasses. Top with the mascarpone mixture. Sprinkle with amaretti cookies and serve.
