We love this time of year! The coming months are full of holidays where food is a large part of the celebration.
Each year we see familiar faces come in to pick up their yearly specialties as well as new clients that we help gather ingredients for recipes that are new to their feast.
As Thanksgiving is quickly approaching we wanted to send a quick e-mail with a recipe you might want to try out this year and aSave-the-Date announcement for our 5th Annual Holiday Planning Event!
{Recipe} Pumpkin or Squash Lasagna
1/4 cup unsalted butter*
1/4 cup flour
3-1/2 cups whole milk
1/2 cup fresh basil
1 box no boil lasagna sheets*
2-1/2 cup whole milk mozzarella*, shredded
1/3 cup parmigiano-reggiano*, grated

Heat oil in large skillet, add the cubed pumpkin and toss to coat. Season with sea salt & pepper, add 1/2 cup water, cover and simmer over medium until pumpkin is tender, about 20 minutes. Cool slightly and transfer to a food processor, add amaretti and blend until smooth. Season with sea salt & pepper to taste.
Melt the butter in a saucepan, add flour and whisk for one minute. Slowly whisk in the milk, bring to a boil and simmer over medium until thickened slightly. Stir often. Whisk in the nutmeg, cool slightly. Transfer half of the sauce to a blender, add the basil and blend until smooth. Return to the saucepan and stir to blend. Season with sea salt & pepper.
Butter a 9×13″ baking dish, put a little sauce into bottom of dish. Put one layer of pasta sheets on top, put 1/3 of the pumpkin sauce over the sheets, sprinkle with 1/2 cup mozzarella, & drizzle 1/2 cup sauce over mozzarella. Repeat layers two more times. End with remaining sauce on top. Cover with foil and bake in a 375* oven for 40 minutes. Uncover and sprinkle with remaining mozzarella and parmigiano-reggiano. Bake uncovered another 15 minutes until golden. Let cool for 15 minutes before serving.
