Our shelves & cases are full again!

Thank you all for a very busy holiday season! It took us a couple of weeks to get our inventory all back in but we are stocked back up with all your favorite staples plus a few new items.

{Recipe} Lasagna Florentine

1 lb fresh ricotta*
1 egg
1 package frozen spinach, chopped fine
Sea salt* & fresh ground pepper*
1/8 tsp fresh ground nutmeg*
1-2 Pomi Alfredo sauce(s)*
1-2 package(s) fresh lasagna sheets* or flat pasta sheets* (boil dried sheets first)
1 lb mozzarella loaf*, sliced thin
1 ball fresh mozzarella*, sliced thin
Optional: 1 lb Italian sausage*, browned

Preheat the oven to 350*.

Combine the ricotta, egg and spinach in a bowl. Season with sea salt, pepper and nutmeg.

Put a thin layer of sauce in the bottom of a 9×13″ pan. Put on a layer of pasta sheets, a little sauce, some of the ricotta mixture, sausage if using, and some of the mozzarella loaf. Repeat layers and finish the top with a little sauce and the fresh mozzarella ball.

Cover with foil and bake for 40 minutes. remove foil and bake another 10 minutes or until the cheese is browned. Let cool 10 minutes for serving.

‘Tis the Season – For eating lots of great food!

We love this time of year! The coming months are full of holidays where food is a large part of the celebration.

Each year we see familiar faces come in to pick up their yearly specialties as well as new clients that we help gather ingredients for recipes that are new to their feast.

As Thanksgiving is quickly approaching we wanted to send a quick e-mail with a recipe you might want to try out this year and aSave-the-Date announcement for our 5th Annual Holiday Planning Event!

{Recipe} Pumpkin or Squash Lasagna

1 Tbsp good olive oil*
2 lbs pumpkin or squash cut into 1″ cubes
12 amaretti*, crumbled

1/4 cup unsalted butter*

1/4 cup flour

3-1/2 cups whole milk

Fresh ground nutmeg*
Sea salt* & fresh ground pepper*

1/2 cup fresh basil

1 box no boil lasagna sheets*

2-1/2 cup whole milk mozzarella*, shredded

1/3 cup parmigiano-reggiano*, grated

Heat oil in large skillet, add the cubed pumpkin and toss to coat. Season with sea salt & pepper, add 1/2 cup water, cover and simmer over medium until pumpkin is tender, about 20 minutes. Cool slightly and transfer to a food processor, add amaretti and blend until smooth. Season with sea salt & pepper to taste.

Melt the butter in a saucepan, add flour and whisk for one minute. Slowly whisk in the milk, bring to a boil and simmer over medium until thickened slightly. Stir often. Whisk in the nutmeg, cool slightly. Transfer half of the sauce to a blender, add the basil and blend until smooth. Return to the saucepan and stir to blend. Season with sea salt & pepper.

Butter a 9×13″ baking dish, put a little sauce into bottom of dish. Put one layer of pasta sheets on top, put 1/3 of the pumpkin sauce over the sheets, sprinkle with 1/2 cup mozzarella, & drizzle 1/2 cup sauce over mozzarella. Repeat layers two more times. End with remaining sauce on top. Cover with foil and bake in a 375* oven for 40 minutes. Uncover and sprinkle with remaining mozzarella and parmigiano-reggiano. Bake uncovered another 15 minutes until golden. Let cool for 15 minutes before serving.

We had a wonderful time in Italy! The Farmhouse where we take a group of clients to a Cooking & Pilates Retreat is just magical. The food, wine, sights & festivals in the Piedmont region during the harvest season are just outstanding. For our 2nd Annual Cooking &
Pilates Retreat in Italy!

Just another quick reminder that All Things Italian’s retail and online store will be CLOSED from September 12th-21st while we take a group to Italy! We are going to the same Farmhouse as last year and will participate in many of the same events.

Enjoying your summer?

We hope you’re having a great summer so far, it’s always crazy how fast they go!!!

Here’s a great cold summer salad made with fregola (a traditional Sardinian pasta) that uses fresh local produce from your garden or a farmers’ market. Enjoy!

Fregola with Tuna
(serves 4)
1/2 bag fregola*
1 can oil-packed tuna*
1/2-1 lb cherry tomatoes
5 fresh basil leaves, chopped
1 tsp dried oregano*
1 Tbsp salt-packed capers*, rinsed well
1 shallot or other small mild onion, minced
Sea salt & fresh ground pepper*
Optional – other veggies: cucumber, beans, etc.

Put tuna with it’s oil, diced cherry tomatoes, chopped basil, oregano, capers and shallot in a large bowl and let sit for 20 minutes.

Meanwhile, cook the fregola in a large pot of salted water for 8 minutes or until al dente. Drain and add to the dressing. Add additional olive oil if needed. Mix well and serve hot or cold.
