This dish is excellent served with polenta.  You can easily double the recipe and have a great party dish that makes your house smell wonderful!

1 large organic chicken, cut into pieces
1 jar apricot jam*
15 dried figs
1/3 c good EVOO*
1 T white balsamic vinegar*
Sea salt & fresh ground pepper*
10 cloves garlic, peeled
20 fresh sage leaves

Preheat your oven to 400*.  Wash and pat dry your chicken pieces, place them in a large roasting pan.  Put all of the ingredients into the pan and toss to evenly coat the chicken.  Arrange the chicken in one layer with the skin facing up.  Put the roasting pan in the oven uncovered and cook until the juice from the chicken runs clear, about 45 minutes.
